(Just As Quick As Instant) Blueberry Scottish Oatmeal

STORY

This is a delicious, quick and nutritious breakfast. It takes just 6 minutes to assemble, which is just a couple minutes more than the instant variety. And it’s so much better!

RECIPE

  • Prep Time: 1 minute
  • Cook Time: 5 minutes
  • Total Time: 6 minutes

TOOLS

  • ½ cup measuring cup
  • Small pot
  • Spoon to stir
  • Cereal bowl for eating

INGREDIENTS

1 cup skim milk, rice milk, or almond milk
½ – 1 cup Scottish oats (I use Old Wessex Ltd. Scottish Style Porridge Oats)
½ cup blueberries
Pinch of salt
Sprinkling of your favorite nuts

METHOD

  1. Measure out 1 cup of skim, rice or almond milk and pour into a small pot.
  2. Place pot over medium high heat, and bring milk to a slow boil.
  3. Once milk is boiling, pour in ½ – 1 cup of Scottish oats (1/2 cup of oats if you like your oatmeal soupy. Use 1 cup if you like it firm).
  4. Add a pinch of salt.
  5. Stir oats occasionally for about 3 minutes, until milk evaporates.
  6. Spoon oats into bowl and add ½ cup of blueberries.
  7. Sprinkle on nuts and enjoy.
